We recently featured this delicious Raw Gorilla towering Pisa on Instagram.
The pancakes are gluten free make from buckwheat flour. The recipe is below.
- eggs 2
- almond milk 250ml
- vanilla extract 1 tsp
- buckwheat flour 200g
- baking powder 1½ tsp
- ground cinnamon 1 tsp
- you can put in a little maple syrup to taste if you like it sweet
- spray oil
Whisk the eggs, milk and vanilla together in a jug. Sieve the flour into a mixing bowl and add the baking powder and cinnamon ( if you like it) . Gradually add the wet ingredients to the dry and whisk. Add a pinch of Himalayan salt and leave to rest for 1 hour- we put in the fridge. Take out and leave to come back to room temp.
Spray a frying pan with coconut oil on a medium heat. Stir the batter, and get a large spoonful of batter to the pan and make a pancake. Once golden, flip the pancake over. Repeat with the remaining batter. Separate with baking paper and keep warm.
Boil some water and put in a pan. Break up Raw Gorilla Keto Chocolate in a heat proof bowl and place over bowling pan of water. Let it melt. Add a little coconut oil to loosen and you can add more chopped nuts for extra crunch.
Put the pancakes onto plates, in between each one scoop in coconut yogurt, maple syrup and fruits and top with Rawberry Crispies and berries and create a tower, hopefully straighter than ours . Pour over the melted Keto Chocolate – Devour – pure bliss !
